Abstract

Street foods are defined as ready to eat foods and beverages prepared and sold by vendors in streets and other public places. These foods include snacks or lunch items being easily available within the means of population. The shape of the street food industry has been formed during the recent years primarily as a result of rapid urbanization, convenience, variety and relatively low cost it offers to the consumer. Consumers in urban areas need nutritious and safe food at an easily accessible location at low prices. In many countries, workers as well as students have their first meal of the day from street food vendors.

Abstract

Plant sources constitute approximately 70 percent of the total supply of edible protein on world wide basis while their contribution in developing countries like India is still higher. People in developed countries are slowly shifting over to plant proteins due to high prices and harmful effects of consuming animal protein.

Abstract

In most of the Indian delicious delicacies curry leaves and carrots are widely used. Curry leaf (Murayya koenigill) is used in seasoning and in preparation of some pickles. Carrot (Dauccas carrota) is universally accepted vegetable and can be consumed in raw or in cooked form. Both curry leaf and carrot are β-carotene rich vegetables which are inexpensive and easily available to Indian consumer. Hitherto, these vegetables in powder form are not incorporated in developing a carotene rich snack item.
